(Prep time 5 min. Blend time 20-25 seconds)
This recipe can be used using just 1 cup of roasted mixed nuts or by adding some to the remains of a nut butter you made so that together it equals 1 cup. It’s fantastic for “cleaning’ the nut butter off the blades and you get a healthy dessert!
1 cup mixed roasted nuts (with some extra pecans in the mix)
¼ cup liquid sweetner (agave or honey) You can use the inside of your Vitamix cap to measure…it is exactly a quarter cup.
Add a shake of cinnamon and a tsp. of vanilla extract
Add 3 to 4 cups of ice (depending on size of ice)
Add all ingredients in the order they are listed.
Secure lid with plug removed and turn machine on variable speed one. Increase to 10 and turn on high. As soon as you turn it on high speed, immediately start to use your tamper to blend ice into ingredients! After ice is pushed in, gently keep tapping the top of the ingredients so the mixture is continually moving. When it starts to easily move on its own let the machine finish the process until you clearly see four mounds start to form. It will look totally smooth and blended to all one uniform color. Serve and enjoy!
You can change the flavor! Use your imagination! Add a few spoons of a yummy chocolate powder. Perhaps some rum extract and then fold in some raisins (soak raisins in hot water to soften them, drain and cool first) maybe add a little spinach to make it green for the Holidays! Go wild!
