EAT 5 To STAY ALIVE
Famous 5 Veggie Tortilla Soup…EXACTLY!
As you have seen me do at my show, I lay out 5 veggies that you probably have in your fridge right now!
1 tomato (I use Roma)
1 stalk of celery
¼ onion, unpeeled (I use red)
Place all ingredients in the container in the order listed.
Now for the spices:
1 glove of garlic, unpeeled
1 Vegetable bouillon cube
1 tablespoon of Blend It Up Southwest seasoning (you can try substituting Taco seasoning)
a few sprigs of cilantro
I add 2 tablespoons of Whole Nectar Soy Protein Powder and a handful of cashews or mixed roasted nuts ( You can substitute a small hunk of cheese or a cooked baked potato for thickening as well)
Finally add enough liquid to cover the veggies. I use hot water. The more tepid the liquid, the longer you will have to spin on High to get the temperature you desire.
Turn the Vitamix on a Variable speed 1, increase to 10 and then turn it on High. Process for 3 to 4 minutes or until hot.
TURN THE MACINE BACK DOWN TO A VARIABLE SPEED 1 ADD any COOKED ingredients to create texture! You may add beans, corn, leftover chicken or rice. AND… of course a handful of Tortilla Chips!!!!!
*This recipe has been written for the Vitamix 5200. If you are using a different Vitamix machine, you may need to make adjustments to the Variable Speed and/or processing time.
