(Prep time 5 min. Blend 2 min.)
6-7 Portobello Mushrooms (reserve one)
½ Tsp. Sea Salt
1 clove garlic
Small handful cashews
1 pearl onion
2 c. hot water
Add ingredients in the order listed. Portobello mushrooms should reach the 3 cup line in the container. Standard salt and pepper if desired. Start machine on variable speed one and increase to 10, then turn on high. Run 2 min. Remove lid plug and turn off high. Machine is now on variable speed 10. Drop in mushroom and quickly reduce variable speed to 1 and stop the Vitamix. This adds texture to your fabulous soup. Serve immediately and enjoy!
