This recipe has many names. Some Vitamix demonstrators call the Energy bars, some Brownies and some call it Vegan Chocolate Truffles.
As far as I know the variations in some of the ingredients are as varied as what we call it. However the end result is always the same…a healthy treat!
You may use the wet or dry blade to make this one!
The basic ingredients are equal parts:
Roasted Nuts (any kind)
Chocolate Chips (regular or vegan dark chocolate chips or even carob will work)
Raisins (or if you prefer dates, make sure to remove the pits)
I use about a cup of each, so the tamper can reach the mixture to process it.
The “trick” to this one is in the actual pushing with the tamper.
I put the ingredients in the Vitamix container in the order listed.
Sometimes I add a few tablespoons of the protein power.
Now the fun part!
I start the machine on a variable speed 1.
I slowly keep increasing the speed, so that the mixture keeps blending and moving.
When it stops moving, I should be between a variable speed of 8 and 10.
This is one recipe we do that you never go to High!
When you get to a speed of 8 to 10, you will start pushing the mixture into the blades.
I push and then stop. Waiting for the mixture to move up and off of the blades again.
As it rises I push again and then stop. And push and stop.
I continue to do this until the mixture at the bottom of the container begins to look like fudge.
Try to keep it going until all that is remaining on the top portion are a few chopped nuts.
These can be mixed in when you pour it out to serve and will add a little texture.
When the mixture first comes out it will be soft and hot.
By pressing pieces of it together you can form little balls or bars.
For variation you can roll them in coconut or more chopped nuts.
They can also be refrigerated so they get hard and cold.
They really are yummy!
